Stainless will fry an egg beautifully — if the preheat is exact, the fat is right and the heat is right. Miss one of the three and breakfast welds itself to the pan. Cooks who’ve done it for years hit that window without thinking. If that’s you, keep your stainless. Genuinely.

Round two
Coated non-stick: wins the round, loses the argument
Let’s be straight, because this is the round we lose: the coated pan released its egg first try, day one, no technique at all. If the test ended at “which pan is easiest this morning,” the cheap coated pan wins and this article ends here.
The question is how it wins. A non-stick pan releases food because a synthetic coating sits between your food and the metal. That coating is a wear part — the manufacturers say so themselves, which is why the care leaflet bans metal utensils and why the pan you bought two years ago is slick in the middle and matte at the edges.
A coating that thins out over two years doesn’t vanish. It goes somewhere.
That is the whole case against it, and notice it isn’t a health lecture — it’s just wear. Every scratch from a fork, every scouring pad, every overheated evening is coating leaving the pan. Some of it leaves on the sponge. The rest leaves at dinner. And when enough of it has gone, you buy the pan again, which is the business model.

The release comes from the hammered titanium surface plus proper heat, not from a layer that can scratch off. Which changes what you’re allowed to do with the pan: metal spatula, steel wool, a hard sear — there is nothing on the surface to protect, so nothing on the surface can end up anywhere else. The honest part: it is not effortless on day one
The titanium pan asks one thing of you, and we’d rather tell you here than have you find out the hard way on the first morning: it needs about three minutes of preheating before the butter goes in. Skip that and you get the stainless result, not the titanium one. The whole method:

Read the two rows we lose again if you like. Coated non-stick really is easier on the first morning — that is its entire appeal, and it is real. And nothing beats “no preheat.” What you’re deciding is whether one effortless morning is worth a wear layer between your food and the pan for every morning after it.
